Fig and Fudge Biscuits

These biscuits can easily be made by kids with only a little grown-up help, and they're deliciously crunchy. My kids love to make these, and they are popular when it comes to a mothers day or fathers day treats for the grandparents. Place a sheet of baking paper onto a baking tray. Put the flour and butter into a mixing bowl and rub the two together to make a crumbly mixture. Snip the stalk off the dried fig then cut the fruit into small pieces using the scissors. Add to the bowl with the sugar and the fudge pieces. The recipe makes a mid-week meal extra-special with its jumble of cooking influences. Tasty and filling - and so easy to make! Just add in any veg you have left over from a meal - from peas and sweetcorn to roasted sweet potatoes. Peel the stringy bits from the celery before chopping to reduce the bitter taste. Even if you don’t have as much chicken as the recipe says, it still works well!
